Hail to the Capricorns! December 22 - January 19

Well, this birthday found me. And just like that, I am SIXTY-FIVE. 
Holy Crap!

Throughout our youth, we understand this age group to be Senior Citizens! Let me say that again, I am officially considered a Senior Citizen. Legit Medicare recipient. While I am fully embracing it and glad to be here, it is still such a mind bender that I am, well, a senior citizen. I am sure I am not alone when I declare how strongly I still feel like my younger self in all the various forms: sassy, capricious, curious, impressionable, playful, energetic, adventurous... all of it!

I also also acknowledge how those same traits helped me get to HERE! Sixty-five and still full of the girl that I used to be, and the woman I have become. Forever grateful to arrive at this wondrous place; right HERE, right now, Looking backward to propel me forward. Oh my, the future looks Bright!

ENERGIZE ME, BABY!

Get some tiger in your tank:  time to move that body, Baby!
 
January: known for dark mornings, freezing temps, and post-holiday doldrums. 
 
Listen Baby, It’s time to revive those winter blues and give that mind and body a good swift kick in the ASS and get moving.
 
Moving can take many forms: whatever feels best, whatever gets you to the Starting Line. Grab a friend, join a group at least 3 to 4 days a week. Move for as little as 20 minutes. Just Do It! 
 
I have shared my January workout playlist that helps keep me motivated and moving to the beat! You will feel so goooood- Seriously, move to groove, Baby.
 
 
 

SOUP'S ON!!

What to cook for a cold winters day?
Chicken Tortilla Soup, Baby!
 
Here is a perfectly satisfying dinner to serve up on a cold winters night! 

A good friend made this dinner for me. I took the recipe, and have served it several times this winter! It is so hearty, rich, and satisfying on a winter evening. 
 
I've also included a winter cocktail favorite: Whiskey Sour. It pairs nicely with this dinner plan (as well we like to serve with ice cold Modelo Espécial).
 
Serve with salad greens. Finish with a simple flan to soften the residual of the rich, bold broth that makes this soup so wonderful and memorable. 
 
Note : A few things I changed
 1) The recipe does NOT call for Hominy, but I added a 15 oz can (or 2) to make it almost like a chili. 
2) I added 1 small bag frozen corn or 2-3 ears fresh corn cooked and cut from cobb.
2) I  added the juice of 2 whole limes to the broth -   YUMMY!!
3)  I boiled 3 skinless chicken breast in 2 cups water 1 cup chicken broth (or until chicken is covered) Slow boil for 25 min  - let it cool and shredded it.
4) I upped the quantity of Chipotle pepper & sauce from from 1-2 teas. to 1 tbs.
 
This meal plan is a home run! Soup, salad, simple dessert.

WINTER SALE, BABY!

It took a while to get here, but indeed it has finally arrived!
